A Little Slice of Heaven

I love cake. Period. End of story . . . or beginning of this one. I also love my husband and he recently celebrated a birthday. This is when I get an excuse to bake things I love for the one I love.

For the past 14 years, his favorite things remain the same.  He loves spaghetti, watermelon, KISS, rock and roll!! And when his birthday arrives, he requests his favorite flavors in cake form. Strawberry shortcake, mint chocolate chip, and this year – cookies and cream!

The homemade cake and buttercream frosting recipes I found on Kitchentrials.com may just be my favorite homemade recipe to date. It was beyond simple, had a fluffy texture, and was mouth watering tasty. It was a little slice (or three) of heaven and demands to be tried! I made a few changes here and there, but can’t wait to try a few more recipes from Katrina because this was JUST.SO.GOOD.

Cookies and Cream Cake

Ingredients

  • 1 cup butter, soft
  • 2 cups sugar
  • 4 eggs
  • 2 tsp Trader Joe’s Bourbon Vanilla extract
  • 3 cup all purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • 12 oreo cookies, crushed – I used a Ziplock bag and a large mallet

Instructions

Preheat your oven to 325ºF. Oil and flour your pan of choice. I selected a bundt pan. (If you select cupcakes – preheat to 350ºF)

Mix the butter and sugar until light and fluffy.

Add the vanilla and the first of four eggs. Add the eggs, one at a time, beating to combine after each one.

In a separate bowl, add the dry ingredients and mix. Flour, baking powder, baking soda, and salt.

Combine. Add 1/3 of the flour mixture, followed by ½ cup of buttermilk. Repeat, ending with the last of the flour mixture. Then add the crushed oreos and combine.

Bake for 30 minutes (20 minutes for cupcakes), or until a toothpick inserted into the center comes out clean.

While the cake cools, begin mixing up the frosting. This frosting tastes like the center of an Oreo and will definitely ruin diets.

Buttercream Frosting

Ingredients

  • 1½ cups butter, soften
  • 1 cup vegetable shortening
  • Approx. 8 cups powdered sugar
  • 1 tsp salt
  • 2 Tbsp milk
  • 2 Tbsp corn syrup
  • 2 tsp Trader Joe’s Bourbon Vanilla extract
  • Crushed Oreos – I used the rest of the package!

Instructions

Mix the butter and shortening in a bowl for 7 minutes, until light, fluffy, and white in color. I do not use a stand mixer, but this is one of those times my arms would have appreciated the help. Stir as long as your arm will allow and remember, it is all extra love and will make your cake taste THAT.MUCH.BETTER.

Once your arm is sore and you are ready to give up the fight, add in the powder sugar, salt, milk, corn syrup, and vanilla. Once combined, add the Oreos and try not to lick the bowl.

The cake isn’t too sweet, but the combination of cake with frosting hits the spot. We sang happy birthday out of tune, my husband blew out the candles before my kids got to them, and we all enjoyed cake. Family birthdays are some of my favorites and that isn’t even because I get to eat the cake in PJ pants with a comfy elastic waist . . . but that is definitely a bonus!!
